Our country lacks durum wheat grain production as well as manufacturers of macaroni flour. Thus, at present only 500 000 tons of durum wheat is produced while more than 1 million tons is required only for pasta production.
Besides, the quality of flour used by pasta factories is hardly decent. Even strong white flour isn’t always compliant with quality standards.
